Experts' Experts: Why young cheddar makes a better grilled cheese sandwich
The wonderfully obsessive food scientists at Cook's Illustrated drilled down on the subject in the latest (September & October 2013) issue and discovered why artisanal cheddars, aged for years to a piquant edge, don't do well in the grilled cheese sandwich arena.

Of course the cheese model wouldn't apply to human aging.
