apart from the bread knife the others are not useful as knives and should stick to being pretty :-)

Cute, but a kitchen knife without anything to keep your hand from sliding forward onto the blade? Nope! Nope! Nope!
Katana (and tachi, wakizashi, ōdachi and nagamaki) were handled very differently and usually meant to be swung and to cut/chop rather than to stab/slice and had much larger grips. This is why Europe developed swords with handguards early and never lost them.
