As a terminal grillhead, I must ask why this device actually exists. When I grill peppers, I simply lay them directly on the grate and let the fire do it's work - afterwards I completely remove the charred skins and seeds leaving only the smoky, delicious flesh for consumption. Raising the pepper away from the flames only makes it take longer to grill

Try this next time you grill - put the whole, washed pepper on the grill and roast until the side is black (and I mean completely black). Rotate the pepper until you have done all sides. When complete, put the pepper in a bowl and cover it with cling wrap for a couple of minutes (the steaming action helps to loosen the skin.) remove the pepper, peel the skin off and clean out the seeds and white rib flesh from the inside. Serve either by themselves or sliced into strips and served in a salad.
