I had a professor in my first university that thought he could save the third world with bugs raised for food. Substituted a test grade if you came to his seminars and ate the bugs.

Grasshopper was my favorite. Buttered cockroach tasted like lobster (sea-roaches, IMHO)...sadly, I don't like lobster. Not my favorite, but if I were starving, it would be much better than nothing.

"Cricket flour." I am nervous about this. From what, ah, cut, of the cricket carcass is this high-protein, low-fat, all-natural foodstuff extracted. or rendered up? I would like to be keen but I'm ashamed of my lack of enthusiasm.
