Helpful Hints from joeeze: Does freezing fish kill bacteria?


Short answer shorter: No.

Wrote Harold McGee in the New York Times:

Freezing fish will NOT kill bacteria.

Freezing at very low temperatures does kill fish parasites, which is one reason why maatjes herring and much fish for sushi and sashimi are frozen before being eaten raw.

But bacteria are hardy and will spring back to life when you thaw the fish.

About fifty pages in, I stopped and went to Amazon and put her other four novels on my wait list.

Published in 2014, this compelling story — a National Book Awards finalist that year — is set in a world besieged and destroyed by a fast-moving, lethal plague.

It's so interesting to read just now, when you can stop every so often and compare what's happening in our world with the events depicted in the book.
