A loaf of bread baking in an oven

Fascinating! I don't eat bread very often, but the smell of baking bread is heaven on earth. I never knew about the "ear," very interesting.

The video very slightly has an "Invasion of the Body Snatchers" feel to it, when the replicas were starting to sprout out of the seed pods. The 1956 version more than the '78 version, for me. But I don't think that would stop me from having a warm thick slice with butter, yummm.

The baker I follow has one of those, it's really cool. His is a big glass dome over the cooking surface to trap the moisture. He goes by the bread code. This video shows the rise in steam, which you don't see. If you don't cut the bread it will break apart as it tries to rise.

What you're seeing is the formation of the ear, it's quite easy to do with bread flour, but more difficult with whole wheat. It's cool up here, 60 f this morning so I baked a 50/50 bread to whole wheat and got a nice ear.
